The forbidden black rice was once reserved for the Chinese emperor and his family. All other subjects were forbidden to eat this rice, which was believed to provide exemplary longevity to its consumers. It should not be confused with Venere Rice, whose grains are slightly more rounded. Forbidden black rice is characterized by its intense black color reminiscent of squid ink and its distinctive yet subtle taste with hints of hazelnut.
The red rice of the emperors is cultivated in the Jiangxi region of China. There are many varieties of red rice around the world, but the emperor's red rice is distinctive due to its more intense color. It is a whole grain rice that has undergone natural maturation, giving it its characteristic brick-red color. It has a smell and a fairly vegetal taste that should not be overshadowed by other foods with too strong a flavor.
Bamboo rice is a short-grain white rice infused with fresh bamboo extract after the milling process, which involves removing the hull and bran from the rice. This allows the grain to more easily absorb the bamboo flavor. It thus brings together the two most appreciated plants in Asia. Bamboo rice is characterized by its unique pale green color and its delicate taste with plant notes.
