Small Spelt of Velay

In a sustainable and reasoned agriculture approach and to highlight this rustic cereal that has never undergone genetic modification, Sabarot has established a sector that supports over 300 partner farmers to preserve their ancestral know-how and assist them daily. The Petit Épeautre du Velay is cultivated by farmers in the Puy-en-Velay basin (Haute-Loire). It grows in the same terroir as the Puy Green Lentil A.O.P.: the volcanic soil of the high plateaus of Velay, at over 800 meters altitude, which gives the grain a firm shell rich in nutrients.

The Petit Épeautre du Velay has a slight hazelnut taste that appeals to both young and old. It is said to have "crunch": both crunchy and tender, it holds in the mouth. This consistency gives it a true uniqueness and refinement, allowing it to stand out from other cereals.
